I own Gathered Confections, specializing in local & organic wedding cakes and dessert bars.

Every entrepreneur has a story. Tell us a little bit about yours. How did you end up running your business?
I’ve been baking professionally for over 10 years, but found my passion in the creativity that cake decorating provides. When we moved to the Bellingham area, I knew it was time to jump in with both feet and open my own company.
What makes you stand out when compared with other professionals in your field?
When I begin planning wedding desserts, I love getting to know the couple a bit in order to craft a completely unique design for them. I love using natural elements such as fresh, edible flowers and herbs in my designs, in combination with modern cake styles, clean lines, and touches of gold. Every design is unique, so my style seems to be constantly evolving. One thing that doesn’t change is my focus on sourcing, which means that each ingredient is thoughtfully selected for the highest quality and sustainability. I love working with local farmers and supporting companies that feature organic and fair-trade practices. I also offer a lot of options for dietary restrictions, including vegan, gluten-free, and even paleo options.
What is one piece of advice you would give to couples planning their wedding?
Work with professionals that ask questions! If they have been in the industry for awhile, they will know the common pitfalls and oversights that you might not. I always make sure that my clients have placed the dessert display in a suitable location (out of direct sunlight), have planned for the cutting & servings of desserts, and have made arrangements for the stands and platters that they will be displayed on. Even if I am not supplying the cutting service or renting out stands, I want to make sure the dessert course is a beautiful and seamless process. Working with thorough professionals can save you a lot of time and worry sorting out those little details, and may suggest solutions you haven’t considered.

We love wedding stories. What is one memory or experience that stands out from all the weddings you have be apart of?
I love a wedding with personality! If a big tiered cake doesn’t feel like “you,” I would never suggest going that route. For my sister’s wedding, we wanted a more causal backyard feel and they both loved ice cream sandwiches. We put together an ice cream sandwich bar, with flower petal macarons, ginger molasses cookies, and hazelnut brownie cookies. They brought in ice cream from their favorite local creamery, and it incorporated a fun and interactive element into the desserts. Over the years, I’ve worked with many couples that need to work around dietary restrictions, and am always excited for a new challenge! A couple years ago, a bride came to me resigned to the fact that she would not be able to enjoy her own wedding cake. She wasn’t able to eat and grains, dairy, or eggs. We worked together to create a beautiful dessert that she absolutely loved, and I was so touched to be a part of their beautiful wedding.

What kind of package offerings do you provide?
I offer a ton of customization in my menu! In addition to cakes and cupcakes, I offer a wide range of cookies, tarts, pies and other pastries. Pricing can range a lot based on the level of customization, design and flavor options, but is generally around $5-$9 a serving. Usually after an initial consultation, I’ll put together a menu proposal and quote with a price breakdown, so we can work within the budget and see how different decisions will impact pricing as the design comes together.
What are 3 things you can’t live without?
Black coffee in the morning, my two unruly cats, and a garden bed to grow food and edible flowers.
